Lemon Buttermilk Cookies...gluten free.
I made these today and they are yummy! They melt in your mouth. :) I made mine gluten free, but you can use regular flour. Try 'em!
1 1/2 c flour (I used gf flour blend)
1 t lemon zest
1/4 t baking soda
1/4 t salt
6 T butter softened
3/4 c sugar
1/2 t vanilla
1/3 c buttermilk
3/4 c powdered sugar
1 1/2 T buttermilk
1/4 t vanilla
Cream butter, sugar. Add egg and vanilla. Mix flour, lemon zest, baking soda, and salt. Mix with wet ingredients alternating buttermilk ending with four mixture.
Bake 350 for 11 min and add glaze. :)
